If she still on the job, she is not going to contact Bigby. Especially since most of Fabletown still wouldn't know she actually a spy, besides Bigby.
And even prior to the events of the comics, Cindy has been working for Bigby as Fabletown's spy for years. So this game being a prequel, it still doesn't change the fact that Cindy would still be a secret agent in this time period.
Anyway, the woman is not Cinderella, anyone who read the comics can tell you that. So you are wrong about the third girl in the photo being cinderella.
That may be from the comics (that I haven't read) but that doesn't mean it's what's going on in the game which is prior to the events in the… more comics. If she was an agent of Bigby's for the first two episodes of the game, why hasn't Bigby made any contact with her yet? Also, spies can dye their hair or wear a wig ;P
I don't think his transformation surprised her as much as what he did during the time he was transformed.
I mean, the last 2 times Bigby transformed, one got his arm ripped off(depending on what you did) and the other almost got his eyes gouged out. I'm pretty sure we will do something pretty crazy(or at least hope so). Then again, it was only a guess.

The pile of rocks with the shield is probably some sort of tomb or ritual linked to either Holly's sister or Grendel. It's clearly a hogr, which is a sort of little altar/symbol of old norse paganism, much like the christian cross in a church. If I don't remember wrong, Holly said her sister's body would've been burned. This is probably a sort of memorial or tombstone.
I don´t know if someone already posted this but in the trailer (0:54) there is scene where dum and dee are threatin bigby in the alley next to puddin´ and pie, so maybe that´s why bigby transforms into huge ass wolf and maybe we get to kill another one of them.
