She endured a lot of trauma in her past, which obviously influenced her behavior. It is quite obvious the majority of her actions are not spiteful or arrogant but considerate, even kind and, yes, i'll give you that though I definitely don't find this inherently bad: resolute.
She was just reminded of her past hurt in a rather gruesome way, linked to the deaths of two fables which she feels responsible for.
At that moment the tree is an incredibly offensive symbol of injustice (and pain) to her (for herself and the other women) and she wants it to stop existing as that immediately (as to the protection of herself and others) She is in place of power (or practically there) to make this happen.
So, in her resoluteness, she makes a bad call, which you are perfectly able to contain and set straight without any grievances if you can understand why she does it (or even if you don't)
As for people who say she would be regarded the same way if she had been the opposite gender because they only look at behavior. I have no doubt many would and do, and also that many wouldn't and don't, whether they are conscious of this or not.
Also, Snow defends or aids Bigby in other situations as well, seeing he is trying to turn into a better man (if you play him that way)
As for 'I am not yours to lose!" that some comment on: it is a strong reaction, one that I believe is not so much about Bigby, but to the association of 'ownership' She has been enslaved and abused in the past so naturally her immediate reaction to it is going to be strong.
She does apologize, realizing her outburst is a reflection of her past, and not fair to Bigby.
Of course it's anyone's own choice if they let this scene affect them to that extend. Right of the player. I understand.
I just find a lot of Snow bashing is because of lack of empathy or understanding of her character.

I haven't read the comics, but from the panels I saw and what I've read about her she seems to be much more timid in the games than in the comics. As far as her depiction goes, I liked her most in episode 3, though I think she should've been much less nice to Bluebeard and show some teeth. Actually I want her to show some teeth in future episodes, but in confident and not overemotional way.
And about the situation with the tree, she made a bad call, but it was completely understandable. You don't have to listen to her always, don't burn the tree, but you also don't have to judge her for one quite justifiable outburst. And I agree with Diadorim the line "I'm not yours to lose" is because of her past, from the trauma she had with the seven dwarves to mistreatment from the Prince Charming. You have to consider these things. What makes these characters great and relatable is that they all have weaknesses and flaws and are trying to function within the boundaries which they set.

I don't think Snow is unduly arrogant or bitchy in this episode. There's a lot of facets to the situation you have to consider. She's angry … moreand feels violated by Crane, and is suddenly put in direct charge of the entire community. She's insecure, and needs to make sure everyone understands that she's in charge now, and that Bigby is backing her up. You're not her assistant, either, you're her Sheriff, and it's your investigation. It's not a betrayal to reel her in when she's making a mistake, and it's not your job to suck up to her either. Sometimes you have to stand up to someone to help them improve.
Also, she's nowhere NEAR as callous in the game as she is in the comics. One of the things I initially disliked about The Wolf Among Us was how soft and emotional she was compared to her comics self, and the same goes for Bigby. It's different. Those characters don't see the on screen time that Snow does. Plus they weren't bossing Wolf around. They are just bullsh… moreitting and you know this!!!
Seriously though, Toad's assholeness in ep 1 was crazy. I wanted to beat his ass. I just was cool. Georgie was an asshole as well. Kept me cool for the most part. Holly and Been, yeah they could have been nicer, but if he does not try to cultivate relationships, I could see why they acted that way. If Snow wanted that tree burnt then she could've done it herself. She wants to help poor fables and I get AG did something that is frowned upon (& is equivalent to identity theft), so when she had a chance to use someone's skills for the benefit of Fabletown, she is not as helpful. She's emotional, should not be an excuse but understandable.

I feel like either: 1. I'm playing a different game to you 2. My decisions result in very different dialogue choices than yours or 3. People are completely oblivious to how other people behave in different circumstances. Absolutely nothing about the way snow acts strikes me as bitchy, nasty or overly bossy. She's a pretty average woman who doesn't act like a doormat and defer to the man whenever there's a decision to be made. As far as the tree goes, she said we should burn it and I was like "we don't have time for this, we have to go catch crane" and that was it.
Edit: In fact, in my playthrough at least, her character absolutely hasn't been any more bossy or abrasive than bigby. I like them both.

She really annoyed me when she ORDERED me (her words) to burn down Aunty Greenleaf's tree. That just did not sit right with me. It was cruel and unnecessary. It was as if she didn't care about how people were struggling to afford glamours. She also doesn't seem to respect Bigby's office. He's the sheriff and she's a secretary. He ultimately makes the call on how to handle the tree. It's not even illegal, it's just frowned upon to buy black market glamours or to get glamours of other fables. I also don't like how she just gave away evidence to Holly without consulting Bigby first. It's unprofessional. So dismissing her ideas because "you're not the boss of me" is perfectly fine, but reacting badly to being treated like an inferior rather than an equal is arrogant? Disclaimer: I didn't take that dialogue tree so I don't know the precise dialogue in it, but consider that you were being as much of an asshole to her as she was to you. There is a reason I didn't go down that kind of dialogue tree.

i know the snow is a strong, independent woman with troublesome past but really i have to curse out loud what a bitch she is after playing chap 3 for the first time today, and after I replay it twice too.
I mean some of these characters just don't add up. and I might just be reading to much detail from the comics but at one point early like chapter 5 or something in book 1 bigby says he's never been in a gunfight before and also snow in book 3 does not know that bigby heals in wolf form. Both things have now been proven in episode 3.
I don't think she was 'bitchy' enough to be annoying, at least for me. As it was mentioned, she behaves more like her comic book self. She didn't bother me, I understand that she's mad etc.
However, I have to say that one thing was missing for me - after leaving Greenleaf's apartment, I was really hoping that AT LEAST some sort of small conversation between Bigby and Snow will happen, regardless of the situation with the tree - with options like 'Good call, Snow'/'That didn't go very well'/'Don't mix your feelings with you job, Snow' - I really wanted to show Snow how I feel about this Greenleaf disaster. There wasn't any conversation however, and the next scene jumped straight to Pudding'n'Pie, without any acknowledgement until some small remark from Snow later during Crane's interrogation (still one-sided - you can't respond to her saying 'obey me/respect me' etc.)

The Apocalypse in the Fable Homelands which was a traumatic expirience to say the least
Finances. Not exactly a life success become a prince's wife and then become a clerk even if somewhat high-ranked clerk
Difficult work. Crane giving her shit all the time for not doing job right while he sits on his ass or goes to prostitutes or embezzling. And it's basically Snow who does all the work.
Knowing that Crane has a sick sexual obsession with her doesn't help either.

It's not like he was a thief and got rehabilitated, there are still fables around who are affected or lost people they cared about by his past deeds, so a reminder of what he's done in the past is sort of necessary, as I see it. He might had his redemption, but what he has done can't simply go away, besides, it might keep him in check of not going back to the old ways, would you fully trust someone like Bigby?
On the other hand, she does seem to know him well, so maybe she does trust him to have changed, but she wants other fables to notice it too, and to be fair, Bigby doesn't really bother to let other fables know he's not what he used to be.

I've read some of the comics but I'm starting to have trouble believing that this takes place 20 years before the comics.

yeah u are right but its difficult for them to make a perfect game without any flaws ... we can ignore these small flaws
