No one's birthday date is ever mentioned at all in the entirety of Fables or TWAU.

It's never revealed what any of the Fables' birthdays are, but I would wager that you could call the date that their original story was written their "birthday" of sorts.
The only birthday that can really be determined is the Cub's:
We know they are 3 when Bigby returns and marries Snow in Volume 8, and we know they are 5 by Volume 10. I would wager the Cubs are about 10 years old as of Volume 21, in the Fables universe...
