Earth does exist, there is alot of subtle allusion in the series apart from the names of Earth creatures in gun names. In tps you can press buttons in the hyperion hub of heroism, one of the buttons mentions the fall of "the central government" using this information you must presume that here was some sort of war or ecenomic downfall on earth that allowed the large spacefaring corporations to seize control. (this is mentionned as "the corporate wars")
I think the name eden is given to bsically any planet that is habitable (whence the whole "garden of eden" reference), the name was probably coined by one of the large corporations. So far weve heard of edens one through six.
i think the borderlands are the solar systems farthest from earth (or whichever planet is now the main one) we arent told wether the corporations are the only government left or if they're just colonisers (a la Hudson's bay company) and there are still planets with independent governments.
Gaige is from Eden 5, Fiona's cover is from Eden 5, the fake vault key is from Eden 6, Handsome Jack rescued the space vixen of Eden 6, Marcus talks about Eden 6 in the first game, Vaughn mentions Eden 7 at one point. It's not the only planet name used in this universe but it seems to be the go to for a generic planet name (hell that applies to sci-fi in general not just Borderlands)
