First season's pretty mediocre but (almost) everything after that is absolutely fantastic, especially the Maul episodes. If you want to you can look up important/best episodes and arcs to watch if you want to cut any filler.

Further into the series anakin gets very temperamental. Like for example the scene where he loses his patience and force chokes Poggle to find out how to defeat the brain worms. And this is just season 2.

I remember rewatching all 6 seasons before getting into rebels, it's definitely worth the watch and one of the few canon stuff left from before disney got the rights to star wars. Biggest highlights would be how Anakin is humanized and is made into an actually interesting character, you see all the things that influence his downfall as he slowly loses faith in the order and falls to the dark side. Also Ahsoka, Ahsoka was awesome, she was pretty annoying in early seasons but really cemented herself as a good character in later seasons.
