What is the most significant branching path?
I saw the chart of the first Walking Dead where episode 2 has a different chunk depending on a choice, and I’m aware of the two different Jokers? Are there other things at that level of significance?

In The Walking Dead season 1 you can have a completely different character in the group with a completely different relationship in episodes 2 and 3.
The first half hour of Tales from the Borderlands episode 3 and a little bit after can be very different.
Minecraft: Storymode Episode 2 can be entirely different based on the ending choice of episode 1.
You can control an entirely different character with a different story path in Game of Thrones episode 6 and the episode in general has a ton of small variations.
In The Wolf Among Us (episode 3 or 4), you are given the choice to explore one of three locations and depending on which order you choose from you can end up exploring all of them or just two. The order you choose also effects the environment and characters that show up.
Guardians of the Galaxy has a few moments as well where you can visit different locations and meet completely different characters.
There's also a determinant character in The Walking Dead: A New Frontier that can survive the entire season and you get this nice little conversation in the end if you keep him alive.
I think those are all the big ones I'm pretty sure. Or at least the ones that take up the most time.

It sounds like GoT has the most complex structure, would that be fair to say?
It's the one with the most variation I'd say. What you do throughout the entire series effects the finale is some way even if a majority of them are pretty minor (different character appearances and a lot of different details).
Tales from the Borderlands also shares a good amount of different scenes aside from the one I listed.
You forgot Batman TEW where there are basically 2 completely different episode 5s.
He already mentioned it in the post so I thought he was aware of it already. I did clarify the episode 2 thing though.
