The voodoo lady: spoilers
Now this chapter was primarily about the voodoo lady being evil, as many have speculated, but even still I trust her due to her words and especially after LeChuck murdered our hero. My thoughts on all of this is that the voodoo lady has used her powers to look into the future and see all these events unfold. She records them all in her journal and realizes her role is to simply act as a guide to others. She cannot tell Guybrush the future as that would be tampering with destiny, the bigger picture she mentioned in jail. That also fits with her saying she has never lied to Guybrush, but withheld information so that others are still given a choice and a free will.
She sees that LeChuck would have always been an evil villain one way or another and so his destiny was always to be a villain. How LeChuck got this journal is another matter entirely, but he saw it as the perfect opportunity to frame the voodoo lady and finally stop her from meddling in his plans. Therefore, the voodoo lady knows everything, but never planned it, just saw it in the future. She told no one of it as that would be tampering with the fabric of life. She allowed people to make their own choices and determine their own destinies. She has never lied and has always cared for Guybrush and Elaine. LeChuck was always meant to be a selfish and demonic abomination.

I noticed one thing: when LeChuck was in court explaining what the Voodoo lady did to him, he ultimately mentiones his obsession with Elaine. That moment, he turns to Guybrush, changing his tone of voice saying: "It's all because of her." That caught my attention. What use would a lovesick LeChuck be to the voodoo lady? Why would she turn him lovesick? Isn't it more likely LeChuck once "hired" the voodoo lady in order to give him voodoo powers to have a better chance with Elaine? The journal might indeed only be a journal containing what the voodoo lady SAW over the time, not what she PLANNED or DID. The content remains a secret, at least for now.
I agree: The VL is too non-denying, too calm, too still-helpful to Guybrush as that she would appear the true villain to me.
The shocking ending brings me back on the track of my original speculation: LeChuck and Elaine have to sort things out between them for once and all - this could in fact mean that they actually become married (why else making Guybrush die by LeChuck's hand after all those years of being able to escape him?) I think it is clear to all of us now that LeChuck won't EVER be gone before he doesn't get his wedding plans with Elaine completed.
The question I ask myself is: Is there more reason for this wedding that just love /obsession? Something about "a bigger play" the voodoo lady spoke about?
And she never states that the journal is fake.
LeChuck makes some accusations, and then says it's all in the journal, but we never really get to review the journal to find out what exactly the voodoo lady did that LeChuck says lead him to evil.
And after all of that, why did the voodoo lady hire Stan to defend both her and LeChuck? If she really was up to evil, why is she helping her accuser?
This episode raised more questions than it answered, I can't wait to see the finale.
Has LeChuck been evil the whole time, and just biding his time, or has he been remade evil recently?
If this was all part of LeChucks plan, why take Elaine off on a quest to release those monkeys?
How did LeChuck get the Voodoo ladies diary while he was out with Elaine?
What's in her diary?
Who tried to kill Morgan?
What happened to her body?
What did Jacques tell her before she was "killed"?
Is she still alive somewhere?
How will Guybrush be resurrected?
Will he have to join Murrays crew?
So many questions, and what I'm sure will seem like an eternity to wait!!!
LeChuck went on the quest with Elaine in hopes of her falling in love with him. Once he realizes that it didn't work, he reverted back to the undead. The diary most likely contained events related to the future, which is why LeChuck was able to make it look like it was all planned by the voodoo lady, rather than glimpses into the future. LeChuck may have stolen it quite a while ago and used it to see what would happen in the future, him becoming a human and all, and use it to make plans. That would explain why he let Guybrush stab him, why he grabbed his hand, and why he was so confident that the sword would not kill him, he knew it would all play out that way.
That doesn't explain the fact that VL seemed to be genuinely pissed off when Guybrush told her about the human LeChuck. I also favour the theory that the diary might simply hold her predictions instead of plans, but I also guess that would be too simple. After all, she did ask Stan to defend them both, so that must have meant something. I actually thought Guybrush was quite stupid to accuse her so easily. She had never done him wrong before.
My personal belief is that she's been engaged into some sneaky, underhand behaviour, and I bet Guybrush wouldn't like some of her plans if he knew. But, as it's been said, it's all a part of a greater story. I do not condemn her for now, she might be the only one able to resurrect Brush. Even if nobody was truly resurrected in flesh (not in the fire and brimstone) in the MI game up to this episode.
Also, I want to point out that if we start playing the next chapter as a severed hand, I'll be seriously pissed off if they don't provide an explanation how, after all that voodoo-sponge sucking business, Guybrush's hand is still animated by the Pox.
