Im not sure if its the brown and yellow graphic version, ebay seems to only have the NES versions
There are three versions of Maniac Mansion. The first version has sub-par PC Speaker sound effects and music and blocky EGA graphics 160x200 (with a lot of brown and yellow, though there are still 16 colours used), the second is the enhanced version which has much better PC Speaker sound effects and music and uses higher resolution graphics 320x200 with 16 colours. And then there's the NES version which actually has a soundtrack throughout the game! DOTT comes with the original 160x200 resolution version of the game rather than the enhanced version. Zak McKracken got a similar treatment with enhanced graphics. Zak McKracken also got an FM Towns version with VGA graphics and CD Audio digital music/sound effects (no voice).
Cool. So, obviously I'll be using ScummVM for the games, right? Do I just copy the files over from the disks?
Depends. If you're going to run it in DOSBox, you need all the files. If you're going to run it in ScummVM, you only need some of the files, but it wouldn't matter if you copied all of them or just the ones you needed.

English DOTT that is. The German DOTT includes the enhanced MM, because the original was not translated for PC. Although there is a German C64 version (which has almost identical graphics to the older PC version).
And for the NES, there is also a Japanese version, which is completely different to other NES versions.
You mean 8-bit colour (256 colours). I remember LucasFan talking about it and he said he used Deluxe Paint to VGA-ify the MM graphics just like LucasArts did with their older games (Loom, Indy3, SMI, Zak McKracken). And Deluxe Paint doesn't do 16-bit colour.

1. Maniac Mansion Original (Commodore, Amiga, PC,etc.)
- Ah, those silly faces...
- The Edisons have pink skin!
2. Maniac Mansion Enhanced (PC, Amiga)
3. Maniac Mansion Japan (Famicom)
- Weird Graphics, no scrolling rooms, not censored like the US NES port.
- Really different graphic wise.
- The port wasn't developed by Lucasarts.
- You can see more pics here: http://home.comcast.net/~ervind/mmjpnes.html
- Extra: there is this picture, when you kill all three kids:
4. Maniac Mansion NES
- Censored like hell. http://www.crockford.com/wrrrld/maniac.html
- Developed by Lucasarts.
- There are two versions, American & European, only difference between them is the presence/removal of the hamster joke. Well, there are three versions if you count a leaked rom prototype which isn't completely censored.
- Adds a cd player with a theme music for each kid.
- Has an extra solution.
5. Maniac Mansion Deluxe
- Fan remake using the AGS engine, 256 VGA.
I think, IIRC, for the Spanish subbed version of DOTT we got the enhanced version of MM.
I think the PC versions of Maniac Mansion were censored a bit too. At the end of the Commodore 64 version, Dr. Fred says to Dave "Don't be a smart ass" when Dave says cash would be a nice way to repay him. In the PC version he tells Dave "Don't be a tuna head".

Although, there is a 16-bit color MM game which is a fan remake called "Maniac Mansion Deluxe" and does not require ScummVM or DOSBox. I've played it. It's good. http://www.bigbluecup.com/games.php?action=detail&id=401
EDIT: here's info on what ScummVM needs to run the original MM and/or DoTT:
