Possible hint for Day of the Tentacle: Special Edition?
In MI2: SE when you go to the costume shop instead of a Max costume there's a Purple Tentacle costume. In the old version it's of course still the Max costume.
Could be just for kicks and giggles, I don't know. But I hope not.

That's because classic mode in the original SE is literally unchanged from the original enhanced CD release. If you unpack monkey.pak and look in the classic folder, MONKEY.000 and MONKEY.001 are there. Checking the MD5 of these files shows that they are completely identical to the enhanced CD edition. For this reason, nothing is changed and the modern mode runs exactly like the original. Classic mode runs "underneath" the new version.
In both modes he just says "Nice Costume!".
I also don't see the reason. Steve Purcell would probably not have a problem with this costume still being there. For a game that takes pride in being "faithful to the original" and plays the reproduction of the old game to death in many parts, that is one ugly deviation in spirit.
They didn't "rip anything out", the costume is still there in the classic version.
They would have to pay Steve Purcell for the rights to use the images again. It would be another expense for a game they're only charging $10 for.

I completely agree that if they do another special edition it'll be Maniac Mansion next. I would, however, imagine that such a thing would hinge on the sale figures for MI2:SE. We shall see.
And oddly enough, while Max is replaced, you can still see Sam in the exact same place as in classic mode.
