So what does the chat options means? Is it different lines of dialogue? Is there an option which has all the dialogue?

    How much that the characters will have conversations.

    So, which option is the "they should talk all the dialogues they recorded" option?

    No, The first option means they don't talk, and the second one means they talk occasionally, third they talk often, and fourth they don't shut up. You'll still hear all dialouge.
