My Crazy Theory - Alternate Universe/Prediction
My theory right now is that: I know they have said Wolf Among Us is a prequel but I am thinking that this is an alternate reality to the comics. This allows them to do some different things in the game and would explain what happens with Snow.

I was actually thinking the same thing, there are some things that just COULDN'T happen without being fixed eventually further into the story, I mean, take snow white for example, she died at the end of episode 1, but I'm pretty sure she's still alive in the comics.
Either by ''Prequel'' they meant something else.
Or Snow White isn't dead, and they're going to come up with some kind of twist in the plot to bring her back to life so it makes sense as a prequel.
Snow White is almost impossible to kill due to her popularity as a character. As you said it's already confirmed to be a prequel and not an 'alternate reality". That's just hack writing unless you establish that it's an alternate reality from the beginning.
There are several ways for Snow to live again, and also possible she faked her death.
Revival: The gatekeeper brings Snow back to life like in his tale. Ozma teaches Snow how to rebuke magic with magic, even though Snow didn't want to be like her mom (a witch). There are probably more but these two are 100% in line with the comics.
