so at the end of the episode it was revealed that jorah was infected by the stone people, does this happen to jorah in the books too?

Nope. Jorah's storyline in the show is currently a mish-mash of different character's plotlines in the books, the Greyscale predicament in particular was meant for Jon Connington, who isn't in the show.
