Did Clem suddenly forget the rules of the zombie apocalypse?
Regardless of whether you choose Kenny or Jane in the final struggle (or if you simply get both characters killed), your Clem will walk away from the rest stop without making sure the person she's leaving behind won't re-animate.
I can understand Clem being too caught up in the moment to think clearly, but wouldn't it have at least occurred to her that leaving a body with an intact head/brain is never a good idea?

Doubt she particularly cared. She was already on the move and reanimated Jane/Kenny would be too frozen to get anywhere near her.
I don't think she would have had that thought with things the way they were. And also, if you shoot Kenny, later on when Clem looks towards the rest stop and says "Oh God, Kenny..." I thought he was behind Jane as a walker.
Why could she think that? Is not like she was going to be around the place long enough for that to be a problem.

Maybe, but in Kenny's case, you'd think she would have given him the chance to be fully at rest. The poor bastard's been through enough.
I don’t know, maybe she didn´t want to risk attracting the walkers by shooting him again.
Considering she most likely just went through emotional trauma, then I don't think shooting them was exactly high on her list of things to do.
Not to mention the fact it'd be a waste of a bullet.
She can use Jane's knife...probably.

True, but honestly, I don´t think she could be capable of doing that. One thing is shooting Lee, quick and painless, and another is stabbing somebody through the brain.

Well this question could be easily answered by saying that when Clem took off to find AJ, Kenny/Jane stayed behind a bit to make sure Jane/Kenny would not re-animate using the knife. Unfortunately when leaving to Jane to die and shooting Kenny in the head, Jane could still reanimate so...meh.
