Telltalegames will meet difficult decisions in whether the baby shall survive and grow up and fast forward in the game or the baby will die at some point. (or most likely, they've already decided what to happen next.)

I saved Sarah from the trailer but I didn't try to save her when she got trapped under the deck. But protecting the baby would be number one on my priority list.
I tried to save Sarah and protecting the baby is a high priority for me. But just like with Sarah, if AJ happens to die anyway, I'm mentally prepared to accept it and move on. As long as I can say "I did everything I could", I can keep going with a clear conscience.

i agree that having to care for the baby could end up being a major dragfest on season 3 if we play as clem again. this is part of the reason why i believe they will take the easy way out and introduce a new protagonist. that way the player doesnt have to worry about the baby all the time and its easier for them to have clem tell us her story differently based on our s2 ending and whatnot.
Season 3 wont have a new protagonist, if they wanted to take the new protagonist route they would have done that for season 2. They are staying with clementine as she is the reason we all care about this game by now. A new protagonist dont care.

the 5 endings nightmare. truthfully telltale can either keep clem and have all endings land us in the same spot for s3, angering players that want their choice of endings to have more impact on the story, or they can ditch clem as the protagonist and just have her explain to our new PC how everything went down. esentially the same thing imo but either way fans that want impactful choices will be pissed.
the baby nightmare. i can see how some players wouldnt mind playing clem in s3 and having to take care of the newborn, but i can also see how something like that would anchor down the play experience and not all players give a salty rat fuck about this baby. if i were one of those players and i had to play s3 with the baby basically shoved down my throat, i would not buy the game. a new protagonist allows the baby to be taken care of by clem offscreen so the player does not have to worry about him as much.
all in all i really hope your right and that clem is the PC next season cuz her story really needs to be continued and i love playing as her, but at the same time i would not put it past telltale to start telling her story from another survivors perspective and if done right that could even be the better option.

I'm worried about AJ in my canon playthrough because Clem is alone, and I don't know how she can take care of the baby. But I hope he can make it, at least on my other playthroughs, because I like him, and want him to be alive, he brings some hope to the future.

Because you cannot tell the future you wouldn't know if you could find the child help (and no longer needing your care) the next day with luck. You simply saw the child as being in the way.
