I didn't see any real problem with a lot of the complaints about Clementine being a child who does too much. Clementine can kneecap zombies but that's because zombies are rotting shamblers to begin with and slow as hell while Clem's only advantage is she's quick. As for everything else, Clem's primary power is she can run away.
As for adults constantly asking her to do stuff, well, most of the stuff they ask her to do is minor stuff. "Go check out that house while I talk with my pregnant wife" is not like, "go kill that zombie."
Yeah, he did, but I didn't really like how he died in episode 3. Carver suddenly beat him up without no reason, left him along with gun in the drawer, just to make his death more "epic".
I would have much rather Clem offer to go check it out on her own. Same with the windmill, just have Clementine do it without anybody asking her to. Actually in most cases where Clementine is asked to do things I'd rather she just do them on her own accord. Even things like the Bonnie Window thing would be fine, giving the choice to the player, without a request from Bonnie.
^Those are all minor things though. They don't break immersion for me because... well... as a kid adults "did" ask me to do a lot of random things. I just see lost opportunity on personality development for Clem.
What breaks immersion for me are things like the dog kick (10 year old kids don't send dogs flying away with the force of a kick), Clem being able to drag Lee anywhere when he's unconscious, the door kick (sorry, but 10 year old kids can't kick in doors), and Clem being shot and then four min later "You'll be fine" with no medical treatment whatsoever. I hate all of these things, as they pull me right out of the game. Luckily, I'm good at putting myself right back in, so they don't "ruin" anything for me, but they make me cringe in a not good way.

Which Luke does because Luke is a moron.
It was bad, illogical, and yes, S2 would've been better without him. He overshadowed more interesting characters and focused the storyline on his predictable nature.

Hmm, generally, or do you mean the specific situations?
Ugh, sorry for the late reply.

Generally, do you think it was good, or the season would have been better without him and why
