Can I delete episodes after beating game?
Questions in the title, when the game is beat can I uninstall all the downloaded episodes? And will my season 2 save/choices still carry over okay to season 3 without them?
Also, when Season 3 comes out and it gets my season 2 save, can I then uninstall season 2?

Sure, but don't uninstall the first episode. You'll still have you save files as long as the first episode exists, uninstalling the whole game will erase the save files as well afaik.

Just one more thing, why would you want to uninstall season 1? Wont you do any replay, ever?
Probably to save space on the hard drive.
What platform are we talking about? I'm fairly sure that you can't uninstall individual episodes on the PC version. I could be wrong though, never tried.
I'm on android so gotta be more cautious about space than if I was playing on PC
I get what you mean, Android phones usually do have limited space.
Which platform are you talking about? On PC you can keep the saves even if you completely uninstall the game.
I don't know if the same applies to OP's Android.
There's always the option to reinstall the game when you want to play it again. I don't know how many people actually keep all their games installed all the time. Personally I own hundreds of games and it would just eat up whole lot of hard drive space to keep them all installed.
