I think she just did not know that her birthday was 6 days before, she might just have discovered when she was with the stranger ( I'm sure she'd have told Lee that it was her birthday...!), that counted the days, or had a watch and knew the date, and than he just asked Clem when was her birthday!

Within those 2 days the Stranger could have asked when her birthday was, the Stranger was probably keeping track of the days, so then he was able to tell how old Clem was. So Clem might have told Christa she was 8, unknowing that her birthday was 4 days ago.

Yes she's 11 in Season 2, Christa probably taught Clem how to keep track of what day it is during the time skip, also it says 16 months later + maybe 6 months before that happens.

No. In episode 1 to 2 she was 8 years old, then she later on aged up at one point. How I see it is that their looking to deep into things.
