Here are some old nostalgia ones of mine.
Tomb Raider 1 - Main Theme
Lara Croft was my idol as a kid, mostly because she jumped around boxy environments and shot at stuff and it was fun. She was an adventurer and when most female role models at the time were Barbie and Disney Princesses, Lara was who 7 year old me needed and looked up to most for a lot of years. The level with the T-Rex and raptors remains one of my favorite levels out of the original Tomb Raider, but this game wasn't known much for a soundtrack. Which is why when this track from the menu plays in one particular level, it was always one of my favorite moments:
Silent Hill 1 - Not Tomorrow
I once held onto save for this part of the game just so I could listen to this track. Aside from the moment killing me when you find out the nurse Lisa [freakishly having the same name as me] turns out to be the same as the monsters in the hospital and there's nothing you can do to save her, having this track play afterwards just killed it for me emotionally. It was different from music in the rest of the game and so sorrowful really it got to me:
Resident Evil 2 - Escape From Laboratory
I'm probably crazy for this one. Every time it gets to the final stage of this game and this damn music kicks up, it's so damn catchy and filled with urgency it just fits with what's going on and for me still holds out. It's one of my favorite 'self destruct tracks' for RE, and it was great having it redone for Darkside Chronicles when it partly did a type of 'remake' for Resident Evil 2:
Resident Evil Code Veronica X - Lachrymal & A Moment of Relief
One of my favorite RE games of all time, I went as far as to get the soundtrack for this game [which I still have] so I could listen to the music. These were my two most favorite tracks from it, one that plays in the save room, and the other during cheesy Steve's moment after killing his zombie dad. I used to listen to them on loop, and I even made a widdle mix tape of them and a few other tracks and printed out a widdle cover for it everything...I was a super nerd for this one, and still am:
Parasite Eve 2 - Opening Theme
My most opening track to a video game I've ever listened to. Still gets me pumped for playing Parasite Eve 2 even after all these years...too bad they don't have the rights anymore and turned the series into a dress-Aya-up in 3rd Birthday:
Final Fantasy 8 - Eyes On Me
Before youtube and before I figured out how to record footage onto a video tape [yeah remember those things?] I used to play the final battle of this game for 3 hours just so I could watch this ending. It's cheesy as hell but for the time, it made little me so happy both listening and watching this after all those hours of playing, and believe me, I played this title a lot:

I'm kinda a noob when it comes to gaming lol and have mostly only played Telltale's games, but for some reason out of all of Telltale's tracks, one that I'm really fond of is the opening credits song from Tales from the Borderlands, episode 2. They way they used it, t'was awesome.
Also for some reason I'm really fond of the Main menu theme from TWD: Michonne. I have no idea why. XD
Might be the mariachi trumpets lolll.

Was the very last track played in the game, during a final cutscene after the credits finished rolling. Yes it's one of those games, with a cutscene after the credits were over. Still a beautiful remdition of one of the game's themes.
Ragnarok Online II. This is what happens when Yoko Kanno composes for an MMORPG. lol
Time to go for some more old school stuff.
For a game filled with cuddly animals, this was a very dark, but powerful track. When seeing the planet, and what evil Andreas had done to it, it really helped reinforce what you were fighting for. They couldn't of picked a better soundtrack really. Players of Starfox 64 know what I mean when I say Zoness.
I can whistle this all day. I played this for 15 years so you can imagine the menu track is literally imprinted into my brain.
I noticed I keep going farther and farther back in time are I not? Sorry I had to literally think of the oldest video game sound track I could think of that I literally have memorized. lol

Even the gummi ship soundtrack for KH1?

Silent Hill 2, Silent Hill 3, Stardew Valley, Dark Souls and Dark Souls III all have the best video game soundtracks of all time.
Almost anything Ace Attorney
Its not just the music tracks that are great though, its the way they are often used in the games that makes them truly something extraordinary (at least in my opinion)

Apart from TTG, I absolutely love Thomas Was Alone soundtrack. I melt everytime I hear it.
I adore the OST for Katamari Forever/Damacy, the music is some of the most unique and catchiest ever
As far as legendary OSTs, Symphony of the Night is up there
And honestly, FFIX. It was Uematsu's last exclusive Final Fantasy OST, and IMO you could really tell there was a lot of love in it.

As I mentioned in another thread, I just started on Assassin's Creed and it's been amazing so far, I'm currently in the beginning of Brotherhood and so far all the music that I've heard is great, but the one that stuck with me the most is Ezio's Family from AC II, every time I hear it I feel like I can't listen to anything else for three days straight, it's just so good V_V
There is also Batman Arkham City's main menu theme, it does very well at putting you in the mood for kicking some ass as Batman, and sometimes I would just pause at the main menu to listen to it. Best Batman theme ever!
Now this one is a bit obvious, but come on, you can't make a gaming themes list without including Skyrim's Dragonborn in it, I mean.. I haven't played the game myself and I love this song, and it's very easy to see why millions of gamers love it as well.
Another Bethesda theme that I like is Fallout 4's main theme, the other games' themes aren't as memorable to me, but this one has something to it that I like, I'm not sure what it is but it feels good.
Now as for GTA's themes, I love them all equally, they are all so great and so fitting for their setting that it's hard to favor one over the other, so I'll just put them all here instead
These along with each game's radio stations say a lot about Rockstar's taste in music.

Oh, Journey is beautiful.
Project Aces: A studio which works almost entirely on the Ace Combat video game series ever since the Playstation 1. They produce what I think have to be some of the up most best sound tracks I've had the pleasure of experiencing when playing their games. Project Aces is owned by Namco. I'd highly recommend looking up their games, definitely if you own a PS4 being Ace Combat 7 is coming out on it.
Ace Combat Zero's "Zero" (Playstation 2)
Ace Combat 4's "Megalith" (Playstation 2) This one was powerful for me, because before hand you spent the last few levels fighting over the enemy's homeland, pushing them back into a corner. From the sky seeing it utterly in ruin, craters where cities one stood, rivers dried up with ships stuck in the soil, their capital city half flooded by the ocean. It was kind of heart breaking. This song played during the final showdown, the remains of their elite airforce vs the aces of ISAF in one epic and large dog fight with the goal of destroying a super weapon that was going to be used to show the world the pain that they suffered, you knew they had to be stopped, even though you pitied them.
Ace Combat 5's "Journey Home" (Playstation 2) unreleased version, sung across the radio, with dozens of pilots from 3 countries flying wing tip to wing tip. During to me one of the most powerful moments of the entire game.
The Sky Crawlers Innocent Aces' "Finale" (Nintendo Wii), PS this track I do not think officially has a name. It is the final dog fight with one of the main characters. The only game that Project Aces has made in recent years that isn't Ace Combat, though it uses the same game engine they used for their Playstation 2 titles. Even though the Wii limited the quality of the game, so did it's budget, the music did not fail to deliver, being Project Aces always released a top quality sound track honestly.
