I think its simply Ed. The guy on the AMA either forgot about the family photo when he stated that or was meant to refer to something else, there is a model out there of Clem's mother, but not the father. Either way I think this whole thing is only being hyped up to stir more discussion to things we will never find out. Clementine came from an average family, no scandals, nothing special, just an average girl from a normal family, at least thats how i see it.
About whom specifically are you talking?
In Season 1 she talked about her dad couple times if I recall correctly, and she saw both, her mum and dad, being walkers, in Episode 5.
So my question: what about his dad?

I think TT tries its best to get us hyped and discourage us from getting away from the franchise - by making up new stuff about Clementine, the very reason that majority of us are still here.
I don't remember Clementine ever referring to her dad by name at all, maybe it was really early in season 1? All I remember is seeing a picture of them and Clementine mentioning her parents in general. Can't remember her ever talking about only her dad or anything about his personality. This is the first time i've heard the name "Ed" as well, much less Clementine refering to him as her dad many times.
Perhaps this is why Clem's voice actor told us Clem is Black Asian.
Perhaps her biological father was Asian. This why she has Asian features.
I think Telltale is trying to fix her character because a lot of people are complaining about her very Asian features, and just be classified as Afro American. She even don't look like a daughter of her parents together, just a bit like her mom Diana.
Well finally Clementine is Asian since her designer is an Asian man who used his own daughter as a model for Clem's face.

Anyway, Ed will always be Clem's father. Perhaps he was her stepfather, but still her dad since he was the only dad she knew before the ZA.
Dianna (Clem's mom) says his name in S1E1 through the recorded messages as well I think. Plus he's referred as such in the files.
Ed is her father, however, it doesn't mean he is her biological father. But yes, maybe Chris just forgot about that detail.
Judging by the family photo, the father is Afro-American and the mother a mix of Afro-American (especially hair-wise) and Asian (facial features) by looks, which would amount in Clementine's Afro-Asian ethnicity.
I don't see the problem here. Clementine has strong Afro-American features and maybe slight Asian features, which would be covered by what I said. Children also don't look like the finished "product" and usually have pronounced faces, puffed up at times. What she looks like now in ANF is pretty accurate of what I imagined. S2 as well was an accurate development of her younger self.
So I conclude: father Afro-American, mother Afro-Asian, father's genes are more prominent.

Could it be a possibility Chris just read that question and thought; "Wow what a cool twist THIS could be" and gave the idea to the writers, before answering ambiguously?
Cool but 1 determinant conversation is hardly many times lmao. No way was I ever gonna remember the guys name based on that and the message at the very start of the game.

Feel like the person who answered that question really doesn't know what they are talking about. If the guy in the photo, the one we saw in the street, wasn't her biological father, why didn't telltale mention this much sooner, instead of five years later???
Honestly to me this whole Clem dad thing is just that the guy who answered the question messed up, either because we haven't seen Clem's parents in S3 or simply forgot about them back in Season 1.
When I saw the photo of Clem and her parents in "A New Day", it looked to me as though her father was black and her mother was Filipino or some mix of black and Asian. Clem always looked to me like she was Blasian.
