Why is this so weird for some people though.. Clem is a character that already exists, you only control her actions, but you can't change who she is in her core. Being straight isn't some kind of "default" option either.
To be fair, Telltale has played up the "you determine (all) Clementine's traits" for a while. Her personality is determined through the actions you pick, people just assumed this means sexuality as well: "I only ever picked the dudes/girls, that must mean that's what she likes exclusively."

Which means that she could go either away and it just depends on your choices for her. In other words: it is determinant.
To make her bi is a cheap way to allow the player to decide what she is since any other option would close doors and make it “not determinant”. So, actually, she is “bi” so that it can be determinant.
Decided by one writer also she isn't bi if she doesn't do anything bi in her life....she is straight if she loved Gabe and loves Louis so use some of ur brain cells and think about that.

It's hard to refute something that a group of writers sat down for a long time and agreed would be the case, but I can understand why some players wish it wasn't this way.

There's a huge difference between you trying to say a child had a crush on a grown man from an optional scene and a writer confirming a character is bisexual.
It does change because she prefers to be straight rather than become bi the thought of dating girls is fine for a girl every human being thinks of the 2 genders and sometimes have some sort of likeness to them but if he/she doesn't DO anything with his/her same gender they can't be considered bi.
