They make graves with crosses like good christian kids, yet they can't even apply the sign of the cross to the graves, pray hail mary, bless it with holy water or something like that. Kind of disappointing. Clem recognized bible page from abel's cigarettes, she probably could've recited whole psalms, or parts of gospels.

I can't tell if this is meant to be taken seriously or not.
But if it is then I'm pretty sure they were all too busy trying to survive a zombie apocalypse to learn how to recite scripture, bless water or learn any other Christian babble. Just because someone can recognise when something is from the Bible does not mean that they would know how to do any of that stuff.
As clearly explained by the kids, the school staff weren't the greatest people and looking at the design of the school it's obvious the place wasn't exactly religious.
In fiction it's not unusual to see people mark graves with crosses regardless of religious background so I don't see why it would be a problem here especially since they're kids. They probably remember seeing it in a movie or something and were like "Let's do that."
They're not exactly professionals in burial.
Though now that you mention it, you do kinda have to wonder why there weren't a few more graves present in the yard.
They even say they don't really remember how to do that properly.
When you walk out with AJ you can hear them talking about it:

They should pass around the body of christ in the form of a wafer and drink his blood in the form of wine and go door to door speaking the good word of Christ during the undead nightmare by all means. They didn't even wear all black. What a shame. Marlon was a god fearing man and he deserves more

They did an outstanding job. Not only did they dig the graves with cups and bowls. But they all came together and had final words on both behalves. You can't find that kind of emotional strength in your average 10-16 year old.

I can recognize bible pages and I can't do any of that. That's like saying someone should have an intricate knowledge of chemistry just because they know the atomic symbol for carbon.
