Because a dragon burned down the Telltale HQ and they had to relocate so the episode was delayed.
Having determinant protagonists was a first time experience for Telltale and they actually added a few different variations in choices and scenes, not to mention all of the possible ending variations you can reach in this episode alone. I imagine that is a large portion of what made the wait for Episode 6 so long.
