When apologising to Ruby he mentions that he bit her because of his 'thing'.

It's essentially a reflex, possibly a more hostile form of PTSD.

Definitely this. He’s reacting to what is (usually) a non threatening stimulus and his body goes into “fight or flight” mode and he... fights. Honestly in the normal world his reaction would be a severe burden, but in the zombie apocalypse... I don’t think it’s always a bad thing (not that they shouldn’t try to help him or anything)
Unless he bites a Walker.

Yeah, I thought about that when I heard he bit Ruby.
Also, how would a walker react? Man, a zombie would totally thrown off. Not really but still. Although zombie meat probably doesn't taste good.

It's a clear case of PTSD and I'll wager it has something to do with whatever happened at the ranch with the whole "blood" episode thing.
Dunno whether this all screams "flashbacks" or "DLC". Hopefully the latter. Seems too unimportant for the plot right now and you probably can't pull off a good explanation to the whole Richmond and ranch thing in a 10 minute flashback in the middle of an unrelated conflict. Plus, more game!
Hopefully it will be shown in some sort of flashback like the ones in a few episodes in ANF, it's unimportant right now but maybe it will play into the storyline later, it's made me curious though.
DLC actually doesn't sound too bad, I'd pay for it, but I don't think Telltale will go there. They've made it pretty clear that this Season is the end of Clementine's story. So either we'll get a flashback or it'll remain unexplained. I mean, do we even need an explanation? It's pretty obvious what happened. What always happens.
