Skybound is trying to hire as much of the original team as possible and sticking true to their vision of how TFS was going to play out no matter what. As Kent Mudle, the creative director, explained during last week's Q&A, there might be some small rewrites for Episodes 3 and 4, but the overall story is going to be the same.
And I wouldn't worry about the rewrites, since they're most definetly the result of feedback instead of demands by upper management. Maybe they write additional scenes with some of the underdeveloped characters, since those are one of the weaker aspects of the game.

Exactly, the rewrites in this case would be small, minor changes that come as a result of feedback, player testing, or something along those lines. It's not like ANF when they rewrote everything on such short notice.

If rewrites were to happen, then think that they would happen anyway. Like, let's pretend Telltale never closes down, but on let's say, the 27th September a writer comes up with a new scene or a new piece of dialogue for Ep4. Don't think of Skybound as the ones actually changing things, it'll be the devs' call.
They're gonna stick to the original plans. If anything they'll be able to add more content due to having money from Skybound and not as strict of a release schedule.
If they will remove Louis then most 99% sure they will remove Violet aswell. Not like losing Violet is any tragedy for TWD as she is boring and bad, but losing Louis, the most charismatic and most well written character in the series? Hell no.
I doubt any significant changes will be made to Episode 3, as it seems that was nearly complete, on the writing and voice acting side. Episode 4 may be a little different, but probably not too much.
Well, considering that it's getting delayed anyway and it's looking like it's gonna be worked on by the old TWD crew, I feel like they'd might as well make a few subtle changes here and there based on user feedback, which might not be such a bad thing tbh.

I hope they remove Louis
Could they add 1 more episode since Skybound is making it now?

Would be nice for a 400 days type of side story.
