I really wanted Red Riding Hood in this game
It would pretty interesting interactions between Bigby and her, you know cause of their... past.
Also I would like to note I have not read the comics. So I don't if she pops up in there.

She does show up in the comics, but not until several issues in and her appearance in the books is complicated. I won't completely spoil it for you, but if you're interested you can check the Fables wiki. Since The Wolf Among Us is set 20 years before the start of the comic, there's no way they could have used her character and kept it canon.
It would have been cool to see her, though. Part of me was kind of hoping for a flashback.
As Violet_Zephyr indicated, Red Riding Hood doesn't appear for several issues into the comics.
But, to be more clear, she doesn't appear for several issues because she is still in the Homelands and hasn't crossed over into earth, yet. Any further complications with her appearance you should read for yourself.
She didn't have much interaction with Bigby because she didn't know his human form
