400 Days: Nate fires a gun at Wyatt and Eddie. If you chose to stay in the car Nate catches up with you. He, while armed grabs Wyatt and tries to jerk him out of the car. If the QTE fails he drags you out and shoots Wyatt. Why the hell wouldn't he just shoot through the window?
Kenny's Death: In the Ben scenario he is seen being bit a few times and overpowered by multiple walkers. Omid and Christa saw this and apparently never seeing anything the bird's eye view directly down.
Carver's Body: If you returned to Howe's Carver's body is seen untouched despite walkers over running the place. Walkers would devour the corpse but I guess not
Kenny and Jane do not reanimate if killed
Clem and Omid are shot very close to the heart however Omid dies before hitting the ground where as Clem is only asleep for a few hours.

The baby being dead then suddenly coming back to life was a bit strange. Unless that's a thing babies can do, idk.

Kenny and Jane would reanimate. We leave their bodies there only ten or so seconds after they die. We just didn't see them reanimate.
For some people, it takes longer. I remember Dr. Jenner in the show said that the turn times vary, some take mere minutes, some take hours, some even take days.
Or the corpse just freeze.
As Jane said, they weren't cold enough yet to the point where they could just freeze in place.

Like you said before, it takes longer for some people. The random walkers don't freeze in place because they are already rotten and still moving, but a fresh body lying motionless for eight hours straight can pretty much freeze.
