If this IS the final chapter to the game it could mean genuine choices that truly change the game. I'd be so happy if this were true. If it's not the final chapter then I doubt it. I see what you mean. Telltale's episodes of GoT and TftB are at least 2 hours long or shorter. TWD S3 will definitely create episodes longer than 2 hours! Just kidding. Honestly, I don't care how long the episodes will be. As far as their quality is on high level. Chances are that Telltale will follow the same rule with Season 3. They always say that they want to create an episode that we will be able to finish in first take, for example while we wait for dinner or something or when we return from work and we want to just relax. (Relax? With TWD? I'm stupid!). Anyway, 90-120 minutes is their current length for episodes so I doubt they will expend it again like in Season 1. Not that I wouldn't mind longer episodes but reality is different, unfortunately.
Don't get your hopes up about this last idea of yours. Endings of Season 2 are part of Season 2 so Telltale won't place them in Season 3 so you could have a chance to chose again. Odds are that if someone didn't had a chance to play previous seasons and he/she don't want to do this then all of his/her previous choices will be randomly generated by game itself, like in Season 2 when it had an option to generate Season 1 choices.
I also hope that the first episode is long... And by long, I mean REALLY long. Like the first episode of S1, everything felt great. S2's fir… morest episode felt lazy, there was never a time when you were in a situation like in the drug store, having to do all the puzzle stuff that is very fun and having so many options of doing stuff; giving clem a chocolate cake, hitting on Carley (by giving her batteries) and all these other stuff.
One of the biggest lacklusters of S2 was the episodes being way fast paced for its own good and the short length.
I also hope that in the beginning, it takes place at the ending of S2 so you can choose again. Some people may not have played Season 2 (why would you not? lol) or may play on another console so the save files are different.

Hm... then maybe Telltale should create something similiar to what BioWare did with Mass Effect 2 when they released it on PS3? They created a comic mini-game where you were able to make choices from Mass Effect 1. I hope they do something like you playing more than one character. I wanna play more than just one protagonist, TWD builds off with multiple protagonists all the time, with one being the main (rick, lee, clem, etc etc.) But just playing as the main in a zombie apocalypse can sometimes get a bit one dimensional, getting the perspective from other peoples eyes can be fun and challenging sometimes.
This was a strong case for me going from S1 as Lee Everett, him dying (as if the main character dying in something wasn't enough) and then playing as Clementine in S2. Excluding 400 days.
Lets say we play as some random dude in the beginning of S2, and then as it progresses we go into playing as Clem maybe? I don't know, it would be better than doing the stereotypical opening with you playing as someone and they are all ok and stuff. I want something completely new.

I think that season 3 will have certain things that make it less "Cinematic" and more game -like. Season 1 felt like a video game TV show and season 2 felt like TV video game. Make interactions with the envoirment.
I'd hope it'd go back to the exploration days of Season 1. It always felt like there was so much to inspect in the environments. Took me back to the good old days of Resident Evil and a couple of older titles with that mechanic of 'let's read the character's thoughts about this particular object'.

Even after Season 1 they had "things" to figure out, even protagonist itself so it isn't nothing new or surprising.
