I think the only reason Clem & Lee aren't "unstable" (using the term in the broadest sense) is because we're playing them. The player is not experiencing things as the characters are; we can pause at any time, we make choices in a rational state of mind.
In the intervening years between TWD2 and New Frontier, though... Who knows. Clementine can't be a ray of sunshine forever.

Yes, but differently than Kenny. Jane hides her instability. She seems mostly calm and normal, but could casually shoot guys in the cojones, abandon people when they need her, and trick people into killing others.

I'd say that it depends on your definition of unstable. For some the word brings up thoughts of someone who is "crazy" or "explosive". For o… morethers, it just entails someone who isn't in the best state of mind.
In the sense of the former, I would not consider her to be unstable. She, for the most part, has a good handle on her person.
However, when I think of what it means to be unstable, I tend to gravitate towards the second interpretation. So with that in mind, I would consider her to be unstable. In fact, I'd consider every character to be unstable in some way, shape, or form. Of course the degree of instability varies, but you could argue any character unstable.
While overall Jane handles herself with deliberation and control, she has carried out her fair share of questionable actions. But even then, you could apply sound reasoning to the majority of her choices. Still, a few do pose some questions regarding her mental state.

I was alluding to the fact that she consciously decided to do all of that; she didn't just rush it all half-assedly without thinking about what she was doing. She was in control of her actions; her impulses were not in control of her.
The exception I'd say was when she engaged in a lethal fight against Kenny. However, if we consider all of her actions, she is no more unpredictable than any one of us. I would say that she does an exceptionally good job at keeping her whims on a leash.
Oddly enough I think the most Jane has been unstable was at the end of episode 3, other than that just pragmatic or too attached to Clementine as a replacement for her sister (I wouldn't call that being unstable). She was acting completely nuts when Troy showed up and wanted to act like a walker, but understandable (I guess) since she's in a very stressful situation.

Jolene was so screwed up after and being gangraped by her ex-coworkers and left to fend for herself that she became fixated on Clementine and went as far as to say Lee stole her from her (which Danny of all people shows concern about, hilariously) in mad reference to having her daughter taken away.
The Stranger lost his family due to a misjudgement on his part with Kenny stealing their food ruining any chance of fixing it, so he comes after the group because revenge is all he has and grows accustomed to Clementine and resentful of Lee for making the same mistakes he made, which causes him to say he's going to hurt Lee before adopting Clementine to make a new family.
Michelle was a petty thief who commented on Clementine's lack of any good supplies and tried to take her hat for the sake of it before loosing interest, even making "you gotta be mean to keep goin' out there" her motto.
Matthew and Carver were just me making fun of their tastes in men/women.
