Agreed. People have waited for such a long time for this game, and I think they have every right to be as hyped as they want to be. I feel like Telltale has put a lot of love and care into this game and it may possibly be the last TWD game by Telltale. However, I do agree that you have to go into a game with low expectations to really enjoy it.
Another factor is that we have had little to absolutely no news in the past month. We have no idea what this game is going to look like. Apart from a minute long teaser and a few screenshots we have almost no understanding about the story line except for speculations. In marketing, this drives people crazy.
That's because its been two years since we got a "real" season of TWD from Telltale. The TWD S2 ended in such a note that made you want more. That's atleast what I think why people are so hyped.

Going off of Batman's releases, we will most like get a trailer on Tuesday of this week with a solid release date of (hopefully) November 15th. There seems to be a solid 2 week wait between a teaser and the release. We'll also probably get a launch trailer on the 14th, just to get us to the most absolute hype. (I won't watch it cause I don't want to know anything. I want to go in completely blind.)
The reason I believe so strongly in this date is because if the freaking voice actor of Clem believes it's coming out Nov 15th, the chances of it coming out then go through the roof.
I would love for that to happen, but it seems with the updated engine games, there's a solid 2 week wait between trailer and release. That would give Telltale only a week to advertise.

Batman had little to no advertising until two weeks before it came out. Just give them time and a little coaxing, and in two weeks people will be on the edge of their seat ready to play.

I feel at this point, Telltale's confident enough in the popularity of the series that they think word of mouth does enough marketing/advertising. I mean yeah, they'll definitely amp it up when we get closer to release, but for now, they probably think people are doing a good enough job of giving S3 exposure.
Might not be the best move in hindsight, but I wouldn't blame them if they felt like the game could carry itself after how well the first two seasons turned out financially/critically

There is usually a build-up marketing campaign...website banners...them actually giving the press tantalising tidbits of information.
The build-up to Batman was very noticeable. This has been stealthy to say the least.
