I think the instances of Javier's strength in Ep4 were addressing fans not content with how his character required assistance far too often in previous episodes. With the training in his career, Javier would have a great deal of upper body strength to be capable of being a batter of note, and running the bases would require more than average bursts of speed for certain.
Even if these instances may appear a bit over the top, they're not really inaccurate. Being stabbed feels like you've been punched. You don't feel pain right away. You feel force - impact. Most don't even realize they've been stabbed until they see blood, and the pain can take a couple of minutes to kick in. Depending on the amount of muscular damage caused by the entry wound, he could still use the arm so long as the tendons weren't ripped or severed.

Clem is absurdly physically strong whenever the plot calls for it. Even without all of her crazy moments in Season 2, she managed to drag Lee's unconscious body for dozens of feet (presumably) in S1E5.
