Actions speak louder than words. Everything Lee did throughout episode 5 is proof enough. He cares about Clementine so much that he goes to hell and back to find her, possibly cutting his arm off on the mere suspicion that doing so might buy him enough time to find Clem and lead her to safety. He doesn't need to say 'I love you' because they already know.
I think it's more touching that we as fans interpreted that he was going to say it - It shows how far we've come with the players relationship to Lee and Clementine.
Honestly, I was fine with the options that were already given.
For me the delivery of "I'll miss you" and "Me too..." was perfect in conveying how they both already felt, without the dialogue having to be too blunt about it.
Telltale wanted to put the "I love you" line in but they thought if they did then no one would choose any other option and it wouldn't really be a choice so they went with "I'll miss you" instead.

Anyways I don't think it would be good if he did say that then it would be a total breakdown for Clementine. but if i were too choose my words it would be "You were like my own daughter i dreamed" then Clem "Yes you wouldve been a great daddy" I can remember that from the barn xD. sorry to do this but i really wanted to put out what i thought.

Lee wasn't her real father so he couldn't tell her that I love you! So ridiculous

And I should say "I'll miss you" is a lot deeper than I love you

I don't know... I love their relationship but they really only knew each other for a few months. I'm not sure if Lee saying "I love you" would've been appropriate given the relatively short time they had known each other. I think Lee saying "I'll miss you" was impactful and heartbreaking enough. The whole scene was just fantastically poignant overall.

"I'll miss you" was stronger for me, she already knew that he loved her.
But it was something like "Thanks for everything"; damn.
