I wish I could have told Ramsay in Episode 5 that the Whitehills were breaking their side of the deal. I also wish I could have found a subtle way to let Tyrion know Cersei was using me in Episode 5 without outright telling him upfront when the guard was nearby.
An option to order the Glenmores kill Harys. Rodrik's plan was to imprison Gryff so why bother locking the guards and Harys as well? Everything would have been succesful if Harys wasn't there to protect Ludd/Gryff.
If you kill the traitor, I wish Rodrik would have been able to perform a formal execution and you could choose to say "I Rodrik Forrester, Lord of Ironrath and defender of the Iroonwod Groves, sentence you to die."
I also wish Mira directly stated which of her brother's were alive in Episode 6 to Morgryn. E.g. her saying, "Rodrik is the Lord of Ironrath, and if you go near it, he will kill you!" or "Asher is the Lord of Ironrath now, and you will not be changing that!" A little addition, but it would have been so, so impactful.
Ludd: "If you weren't so greedy with the ironwood, things would've been different between us!"
Ethan: "Woah, woah, man, I haven't heard that story before! How about we have a good sit down and talk about the damage that's been done to your house, maybe figure out a way to make our amends?"
Mira, finding a note in her chambers: "A meeting with a stranger in the gardens at night?.. Sounds like a big pile of horseshit."
Britt: "Pig farmer!"
Gared: "Lol, K, bye, can't see you up for a nice conversation, so what's the point of standing here and listening to all this?" turns around and leaves
Elaena: "Rodrik, help me take down Gryff!"
Rodrik: "No. Piss off."
Cotter: "I'm gonna go talk to that wildling."
Gared: grabs Cotter, holds him tightly until the wildling leaves
North Grove bastards: "So, we keep those soldiers obedient with the help of blood magic!"
Gared: "Mmm, how nice and interesting" waits for Elsera to turn around, stabs her in the back, wildlings are freed, Gared & Co escape
Elissa: "Asher, what is going on?"
Asher: "I've just found out about Ludd planning to make a move. Don't worry, I got it under control, but you and Talia need to stay in your rooms and don't come out no matter what, it's for your safety, okay?" Elissa and Talia leave, the arrangement stands, Asher and Gwyn get married
Gryff: rolls into the fireplace
Asher: "I promised Gwyn nothing would happen, gotta honor this." Drags Gryff out of the fire, Gwyn goes and tells Ludd about what he did to stop the battle
I wish I had the option to twist the blade around whenever Asher killed Gryff.
I also wish I could have said "I love you" to Beskha during their last conversation. Who knows if they'll see each other ever again.
She might not know who is the lord of Ironrath at this point, no?

All the options that @Blind Sniper, @AronDracula and @VengefulKenny said. Also, I wish I could've cut off Gryff/Ludd's head and then show it to Ludd/Gryff; think of how mad he would be. AND I would've also LOVED to kill Gwyn RIGHT after she stabbed Asher.
A four option one after betraying gwyn, lets people choose their response or thoughts
Gwyn: You've destroyed everything!!!!
Asher:
(1): I'm sorry!!!!
(2): You left us no choice!
(3). Don't play the victim!
(4). {PUNCH GWYN}

At Episode 5 if you leave Rodrik behind
