I've not played MI1:SE yet, but I think I'm going to purchase it and walk it through soon. And also, I've got some plans to introduce Monkey Island to my wife, and I think that MI1:SE might be a bit more enjoyable for beginners of the series than the original one.
But I think (I'm not sure about that, as both Bill Tiller and Bill Eaken couldn't remember exactly) the backgrounds were created at a slightly larger resolution and then scaled down (plus reduced in color). Probably not enough for HD...
Ah man, they should just get both Bills to re-color the backgrounds.
IIRC, the CMI backgrounds were drawn in black and white on paper, scanned in, then colored using high-res color in Photoshop (it's easier that way), then reduced to 256 colors using a special program. So you and Jake are both right.

Well, seeing as A) Jake just said above that the original drawings weren't that much larger than the resolution at which they were ultimately used, and they would need to be re-colored anyway, I think it would take a LOT of work to get what background drawings exist into any sort of shape for a Special Edition.
Having said that, if you could find the original black-and-white drawings, AND get the original high-color Photoshop image files from wherever they've been stored away in the past 13 years (god, has it really been that long?!), you MIGHT be able to do something with them. MIGHT.
I must admit I'm REALLY curious about what LucasArts is going to do with the background art in MI2:SE. If they DO scan in the original MI2 paintings, they'll still have a lot of work ahead of them. Those paintings were often heavily modified by the game artists after they'd been scanned in, so the originals still existing often have quite different details from what is in the actual game. (For instance, on the painting of Phatt Island, there's a bridge connecting the main Island to Rum Rogers' house--a feature that would have been lovely if it had actually made it into the game!)
Of course LucasArts might simply go the same route they used in the MI1 SE and redraw the backgrounds almost entirely. Although this might not be the optimal solution, it might well be the easiest for their artists to work with.
Oh Lord, that concept art of Guybrush makes him look old and anorexic. PLEASE don't use it. Who the [F-BOMB EXPLOSION] is the artist responsible for the Monkey Island character art? He needs to turn Guybrush over to someone else.

What I want more than anything though, really more than a remake itself, is for them to scan all of the original drawings in high-resolution and put them into a slideshow gallery. After that they can do whatever the hell they want in the update.

Are you sure? In my mind, I've always heard Kate's voice as being a bit deeper and rougher than Morgan's. Like the voice of Bosun Krebbs, but without the accent. I actually think that Charity James would be a better choice for Kate. Has Kate always sounded like Morgan to you?
Actually, the only real reason I wanted Nikki Rapp to voice Kate was that at the end of the first TMI episode, many of us thought that the mystery character would be Kate Capsize (myself included), and fans seemed to react well to Nikki's performance, so I thought it would be a nice way of bringing her back. Of course, they probably wont, but that's just my way of thinking.
Somebody said that Denny Delk should play the Voodoo Priest with the Murray voice, as in that Murray was the Voodoo priest before becoming a skull. I think that's a rather good idea myself.
I don't think there was any doubt that this would happen eventually, especially after the first one went on to sell so well. Definitely looking forward to it though, and it'll be interesting to see how they handle the third and fourth games.
The third could be ported as it is, but it's a radically differen't style compared to the first two. But then the fourth game was an utter mess.. I wouldn't mind seeing that one completely remade in a more 2D plain, like the first two.

Honestly the only reasons I'd want a MI2SE would be for the voices, restored content and a better tie up of the ending. They're wasn't too much wrong with that game.

:P My theory is that those three years were actually between MI1 and 2, and the pox can read Elaine's memories but not necessarily in the right order. Plus Guybrush says he's 19 in MI2 and 20 in MI3.
Hmm...considering Guybrush's hair is now in a quiffed-up style in all the MIs except 2, it would almost seem wrong for them not to do it this time. Obviously not to the extent they did in SoMI:SE (Though I really didn't care that much) but maybe just a bit spiked up or something.
In regards to LeChuck, I hope Earl Boen does the voice again as he has done it long enough to really know just what feeling to convey through the character and his voice matches perfectly. The only thing that worries me is that while Earl Boen is the best for this job, the Special Edition for the first one made it seem like he was sort of out of it. What I mean is that the parts where LeChuck was meant to be shocked, angered, ect. seemed to be toned down a lot and held back. He said many of the lines too casually to actually give off a feeling of anger or shock.
I felt this way for most of the voice acting in this particular game (SoMISE) as it made it very apparent that they were reading off a script, may have just been me though. Earl Boen however, along with all the other voice actors, was flawless in Tales, especially the last chapter. The voice actors always do a good job, but for the special edition for secret, it just didn't seem as great as it usually is.
Well, I was also comparing to the re-voiced lines in Chapter 1 and the few lines in Chapter 4. Chapter 5 is still his best work to me.
