I think they're gonna give up and replace him in-game with a static 16x16 pixel sprite.

Well, as long as they'll manage to replicate this face expression, I'll be happy.

The motion capture data can be (relatively) easily derived from the actual film footage, so no worries there. After all, kinect does it pretty well (albeit with a special purpose camera). As there will be human in the loop, the computer predicted movement data can be cleaned and fine tuned well enough - I see no problem there at all.

It is, of course, too early to tell, but we might infer/guess/deduce/wildly speculate from this first screenshot that
    • Doc will not always look at Marty when he's talking to him. "Runs in erratic directions" might be something that TTG will attempt to animate.
    • Doc's gestures will at least be excessive, which is nice; if it really "matches" remains to be seen. ;)
    • The model doesn't seem to have shoulders as a part of its anatomy, so depicting "raised shoulders" as one of Doc's striking gestures probably won't occur.
    • The screenshot might not be 100% accurate. Even though this looks like a cutscene, the menu in the upper right remains on-screen. If this depicts the facts, however, would we be able to walk around in a given scene while Doc has one of his fits?

One of the things that happened quite often in the movies would be that during long dialogue scenes one of them would be in the foreground while the other was in the background and they would switch back and forth as the scene went on. I hope that TT incorporate some of that into the game.

I think one of the best instances of Doc's mannerisms is when he and Marty arrive in 1955 to stop Biff in Back to the Future II and he's running up and down the road for seemingly no reason.
