Hate to keep this up again, but how about "Hands to Heaven" by Breathe? The words and chorus mostly fit Guybrush's being afraid of losing Elaine to LeChuck, even in his final moments.
Well, I hate to bring this back, but how about "Hurt" by Christina Aguilera, about Guybrush's feelings for Morgan after her betrayal and her death throughout ToMI Chapter 4?

TOMI Chapter 5, Rush, "Ghost Rider"
-A bit risky I know, but the sense of continuing to find hope even through the bleakest darkness seems to work well with the various demons (Both physical and emotional) that Guybrush has to grapple with in this chapter.
One piece of music that reminds me of 'Monkey Island' is the main riff of Jethro Tull's "Wicked Windows". Once it starts up and the flute comes in for the first time, I instantly begin to picture the environments featured in the 'Escape...' version of Monkey Island; that's just the automatic imagery that springs to mind.
The entire (brilliant) Plastic Beach album by Gorillaz puts ToMI in my mind. I'm not sure why, it might be the beach theme, it might be the atmosphere or it might be that I was listening to it a LOT while going through the game.
This one reminds quite a bit of LeChuck's Theme, and it's really no surprise how Land said that a lot of his inspiration for the first game came from the Disneyland attraction music...

I can't find a link or video as I don't know what it was called or what episodes it was used in, but one of Giacchino's "jungle theme" tracks from Lost always reminded me of Monkey Island.
