I feel she says that to try and guilt Clem into staying with her. No, I don't think she'd be too keen on looking after him at first either, mostly because she'd be scared that when he'd cry (which he's bound to do a lot) he'd attract walkers (and if anyone isn't scared about that then they're just being foolish.) But I think because Jane knows that Clem is fond of AJ that Jane would do her best to take care of him, especially if they have proper shelter like at Howe's where a baby's crying won't be a problem. Heck they have baby formula there too (which is one of the appropriate reasons Jane suggested going to Howe's in the first place.)

However, Jane, Clem and AJ made it those 9 days from the rest stop to Howe's, so it's possible they could keep going from Wellington in your situation until they find more shelter.
However I'd like to think, once they're safe and have shelter and food, that after a while Clem would encourage Jane to take care of AJ, and Jane would start getting attached to the little guy, even if she didn't want to. It could totally happen, and it could be absolutely adorable. Jane didn't want to get attached to Clem or Luke or AJ, but she ended up coming back for Clem and Luke even after she said she wouldn't. If Jane can't resist coming back for Clem or Luke, I don't think she can resist the cuteness of a baby. She'd open up to AJ just like she opened up to Clem and Luke.

That's what happens when a character appeals to the lowest common denominator and has a whole plethora of idiotic meme's and "cute" little gifs attested to them. Then a majority of that character's fanbase gets butt-hurt when anyone has a difference of opinion and starts terrorizing anyone that doesn't like their lame one-emotional character. Hell, go on the TBF Youtube channel and watch their ending of TWD S2. Their comment section is nothing but droolies saying how terrible they were for killing Kenny and choosing Jane. Not only that, but that it was "insufferable" for them to constantly shit on Kenny and not Jane.
It's pathetic, I've said this before and I'll say it again. Kenny is the single worse thing that has ever happened to The Walking Dead game series, bar none.
