If we know what Viking legends he was based off we could guess. It really could be any story, it doesn't sound like its based off a fable/fairy tale. Tall tale created this character, I don't read the comics but apparently he isn't in them.
It isn't clear what Grendel is, other than him being a complete monstrosity, judging from what the real story says about him and going off the… more animated Beowulf movie. This version of him in The Wolf Among Us is like, the cute and cuddly version of Grendy.
