If the axe Clementine was using was clean, that would be one thing. But it was covered in zombie gore, and was used to to sever a limb. There's no chance to avoid cross contamination into that wound.

I cut Sarita's arm off. And if Alvin survived episode 2, he is beaten by Carver and he covers for you while you escape after setting off the speaker system and is shot by a guard
I misunderstood the last choice. I thought it was giving the option to either kill the zombie or give Sarita a mercy kill, since she was just bitten. If I had known, I would have chopped the hand off, without question. The quicker the poison is removed, the better.
The decision to cut off her arm was probably one of the easiest I have made in the game. Just killing the zombie would have condemned her to a grave. By cutting her arm away, it has given her a chance of survival, no matter how small.
As for the 400 Days characters, It actually made sense story-wise that we get little interaction with Clem. We were prisoners, after all. What would have Carver done if he saw everyone having long conversations with Clem? They were likely scared and afraid to do anything that may have gotten them in trouble. I think they made the right decision keeping the character aloof. Anything more, and it ran the risk of being done just for the fans rather then to serve the story.

I thought the chance she would go hysterical ,passed out, go into shock mode or just draw more walkers was too high.
Since Clem can't carry the woman , I killed the walker.
In the comic it was shown that if you use a weapon covered in zombie bits on someone, they will end up getting infected... so something to think about. I still choose to chop off the arm tho.
That would be a bit of a plot hole now, wouldn't it? We all know that you don't turn from a bite, you get a fever and die from it, but you'l… morel turn when you're dead, regardless if you're bitten or not. I wonder how they'll handle this predicament in the next episode.
After some consideration, I think there is a possibility that exactly the opposite may happen, that she lives if you killed the walker (the arm is amputated more safely right after they escape) and she dies if you cut off her hand (she's bleeding out fast, and the axe was covered in walker guts so she's still infected anyway). It would be pretty cool anyway since it drives home the point that even when you try to do the right thing, you can end up doing the wrong thing.
I chopped her arm the first second I saw it. Seeing Reggie lived without his arm and Lee died because they didn't chopped his arm sooner, that's my reason why I chopped her arm.
I'm very disappointed the 400 Days characters were just mindless roaming guards, and besides Bonnie no one else actually had an important role in the story. But, about Sarita, I did hack off her arm. Reggie said that he managed to survive since his arm was cut quickly, so why not try? Although, I do think irrealistic how Clem managed to cut it off with 2 strikes.
The only reason I can think of where he wouldn't is because of how things worked out with Lee (they waited too long to sever his arm, thus the infection set in and he died as a result - whether via turning or Clementine having to put him down).
So, by not lopping off Sarita's arm in that instant, Kenny may see it as Clementine signing Sarita's death warrant by not running to her aid and cutting off the infected hand.
I can't help but think that cutting the arm is a trap. Like, if you cut the arm, she'll suffer or maybe even die right away and when you kill the walker she can spend her last moments with Kenny, at the very least.
I liked the scene. It was a good "Rush" moment and the scream she had was pure horror. Made me crap myself.

First of all, most of the people who did this are forgetting the fact that the hatchet Clementine used was FULL of walker blood. I hope you people realize what this means. You basically saved her life and doomed her again. You destroyed the infection and in the process infected her again. So it's really not good at all. Not to mention that, in this scenario, the arm/hand was cut off in the middle of a horde of walkers. Yeah, the worst place ever to do something like this. Not only will this possibly attract even more walkers to Sarita, but she will also be bleeding a lot because no one will be able to patch her, considering the situation they are in.
So, both decisions are terrible, but I think that just killing the walker is the less awful option. It's not 100% confirmed, but, considering that the hatchet used to chop her arm off was full of walker blood, the probability that she will remain infected in both scenarios is pretty high. At least she will not lose lots of blood in the middle of a horde if you just kill the walker.
And I hope TT just doesn't magically decide to make her live through the "Cut Off Her Arm" option by forgetting that the hatchet was full of walker blood and magically didn't infect her. In all my playthroughs, I always try to save as much people as I can, and with Sarita it's the same, as long as I can keep her and everyone alive, I will, but please, don't make me do it while destroying the concept of logic.
P.S. Was I the only one extremely sad about Carlos' death? I really liked his character and I just can't believe they killed him already. Definitely never saw that one coming. It's a real shame.
