That's what the whole argument was about. Going back would have enabled them to feed and warm and care for the baby. Kenny wanted to risk even its life on his hunch, and when no one agreed with him, he turned violent and tried to force it.
Kenny was unhinged, prone to blowing his fuse and causing even more problems than are currently going on. Frankly, I'm miffed that there is no option to confront him about his behavior sooner and let it get out of hand to the point where everyone died, because no one could trust each other, because Kenny can't control his emotions.
And then he tries to just apologize about it later. "I'm sorry, it was just one of my episodes. Oh, someone said something smart-aleck? He needs a bullet in his head 'cause he's a danger to everyone."
Kenny would have fucked that baby up, and even Jane could see that. She did what she had to do. Both Clem and Kenny cared about that baby. And they both reacted differently. Clem didn't lash out. Predictably, Kenny did. Just as he has all episode, and just as he did all season. It was his way, or the highway. Get in his way you get killed.
Sounds like (as the game all but outright said (or maybe it did, it was an emotional roller coaster)) another antagonist we just offed in episode 3 who wanted to bully people around and thought that what he did was always the right thing to do, in the guise of keeping people safe. If you were against that, you were a threat.
With hindsight we know she hid the baby. But was killing Jane the "logical" thing to do? Or was it an emotional rage out because this psychopath can't keep his feelings in check, and merely lashes out at causes and sticks to his rigid thinking? If the baby really did die (probably from the cold, probably because Jane dropped it when she was attacked), how would that have been the fault of Jane? And if it did happen, this would have been the same result.
Kenny himself even acknowledges it on his deathbed, commenting on how he was seeking this all along (probably why he tried to save Ben, heroic sacrifice, but managed to live through it, probably because he was a fan favorite (for some reason)). He knows he is unstable and unable to control himself, and while laying dyeing, he's glad he can finally be rid of the pain.
My Lee was not a Kenny ass-kisser. He like him in his own way (mostly for the sake of cooperation, but he did a lot for the family). Often he found himself at odds with how Kenny acted, going along with his plans for lack of anything better to do (and still managed to convince Kenny to help him look for Clem in Season 1 Episode 5). Lee would have wanted to send the baby back to be cared for while he and a group kept going to find this supposed haven Or would have set out to find it after setting up a base of operations.
Jane saw the game railroading Clem to follow and support Kenny and did the only thing she could to prove her point. And she was right. I can't blame her for that.

I wouldn't try to rip their heads off. I would ask why they did it. If Kenny had calmed down and listened to Jane's side of the story, her plan would've COMPLETELY blown up in her face.

Jane was trying to prove her point about Kenny, while that point was honestly a little trivial. However, I do not think Lee would do something like that to another person unless they were an immediate danger, which Jane wasn't.

She started this situation, and halfway through she had the opportunity to put an end to this, she was the only one able to stop it, but she refused. And she apparently underestimated how much of a fight Kenny would put up. To be honest, I don't know why she didn't just shout out that the baby was indeed alive once she started losing the battle. I guess she trusted Clementine to save her. But that was, again, a huge risk, forcing her to choose like that. In the end I'd still say it was more on the side of stupid, rather than smart. The risk was just too big.
