I wouldn't use a knife in fist fight. If I was fighting Kenny (and not know him much like Jane) I would've instead knocked him down by hitting the knee caps first then I'd quickly subdue him to submission, if needed I would just break ankle so he wouldn't fight back and end the situation quickly. Or just kick him in the nuts. To many, pulling a weapon out is sign of wanting to kill. Yes she did put it away at first. But outside her posture was a bit murderous like Kenny's. Obviously both wanted to kill each other at that point.

Jane even said "It was an accident." To which Kenny will reply "Bullshit!" and "How could you kill a f******" child." I believe Jane wanted to show that once Kenny was put in a rage, he was gone beyond the point of reasoning, resorting to violence.

Arvo gets beaten like Carver did to Kenny, albeit less extreme. Although Arvo got stolen from (a gun at least), lost his sister and group, lead them to a safehouse, and kept getting berated and hassled all along the way.
Jane provokes him, and without knowing the truth and working off assumptions, goes to kill Jane. He initiated the fight.
The contrast is Kenny's reaction with Clementine when she got Sarita killed. Extremely angry. Blamed her no matter what she did. Point of the matter is, if Clementine was around and AJ died or something, Kenny would fault her lack of action or the fact her action didn't help. And this would be a baby we're talking about. Kenny exploded on Jane. Would he do the same with Clementine?
Thing is though, after everything's said and done? I think Jane's plan, as idiotic as it was, made Kenny wake-up. Realize what's wrong with him. He acknowledges his anger and fears it. That he might kill Clementine if he keeps acting like he does.

That happens in another playthrough. I think this is the reason people are so divided. There are so many different endings that everyone see… mores the events in a different way. The ending you showed is the one I got so I felt that Kenny was the one that kept the fight going, but I also saw the one Franubis mentioned so I can see how people thought Jane did. There really is no right or wrong answer here, just fan interpretation.
