Obviously being with Rambo would be massively advantageous for surviving, but on the other hand, you could wish to fight alongside those who are close to you, ect. Rambo being the vastly superior fighter doesn't nesescarily carry any weight in this decision making.

So I'll be as straight-forward as possible: fighting ability in an apocalypse is crucial to surviving, but the importance of that being a defining choice in terms of choosing your allies greatly differs from person to person.

During the apocalypse, Joel reverted into NEVER talking about his past, or his emotions. He even became a bandit, murdering innocents so he … morecould take their stuff. He shed his morals to survive - all this after his daughter dying. That's what you call a breakdown.
Despite all the shit Kenny has seen, he's not once shed any morals, or hurt those he recognised as innocent (I know someone will say Arvo, that's why I say recognise - in the moment, Kenny thought Arvo was at fault).
I don't know about you, but to me, Ellie bore a strong resemblance to Ellen Paige.
And I personally, have always thought Ellen Paige is as cute as hell.

I think any of the ones you listed could do it (probably not Ford because of age, but you already mentioned that) but I´d still favour Jackman out of your list. Besides him being the one I´m most familiar with I think that, having played Wolverine, he´d be the one most suited for...Joel´s sudden outbursts...lack of a better word, honestly. I don´t know what else to call them. Also, he´s got that look suited for these violent scenarios.

Yeah, Kenny attacked Mike just because they headbutted. When Joel fights someone, and I agree with you on the fact that he always begins a fight with the indend to kill his opponent, it's always for a more valid reason, as horrible and cold that reason might be, he always knows why he's doing it.
