The reason he says those things to Clem when he's dying is because he wants to comfort her and not wanting her to blame herself forever for what she's done. The only real reason he'd want to die is because he realizes that even she thinks he's too unstable to live since she shot him, and therefor she'd be better off. It's just not in character for Kenny to give up, at least not while Clementine is alive (after all, he tells her he was protecting her from Jane when she fought her too, although it was probably mostly for revenge).
But yeah, his death if you shoot him is actually kind of ridiculous. He has just enough time to finish a very cheese speach and then there he goes. I'd prefer it if you just shot him and that's that... No one got to say goodbye to Jane when/if she dies, after all.
He was still pissed at Luke and what he did, that's why he tells him to get his shit together. Even after that they didn't see eye to eye an… mored didn't get along. We even see as they're walking they're still arguing and are at odds, so he didn't instantly forgive Luke.
And the reason he acts like that after Clem shoots him is because, as he's dying, he sees and regrets what he has become. He tells her how he let her and everyone down and how she is better off without him. In fact, this incoming death finally gives him peace of mind and gives him what he's wanted basically since Katjaa and Duck, death. He wanted to die, but he just couldn't bring himself to do it. He talks about how you don't end it because it's hard, how you stick it out and help the people around you. He tried to do that, but at the same time, wanted someone to end his suffering. in my opinion telltale ruined S2's ending by not having enough guts! It would have been so much better if

2:AJ dies
3:Kenny blames Clem for killing him
4:Jane says something like: "CLEM YOU STUIPID LITTLE GIRL HELP ME DAMNIT!!!!!!!!!!!!!!!!!!!!!!!!!"
5:It was Luke instead of Jane (I know this makes 4 obsolete but 4 would make a bad situation slightly better)
6:ends with a crazy cliffhanger like: Clem gets bit? or The doors to Wellington open and it cuts off before we can see what wellington is like?
7:Some nice old fashion crying by the players. And no my playing through I shot Kenny and did not cry. My second time I let Kenny kill Jane and did not cry. closest thing to crying for me was Omids death Or Luke's.

If Telltale actually though about what they were doing before making the game they wouldn't have brought Kenny back, and if they did at least Let it be Luke vs. Kenny, Let us have a stronger bond with Nick before killing him off, same with Walter, Alvin, Carver (yeah I said Carver) And simply never brought Arvo back. I know it was a vital part of the story but... A vital part that could've been took in different direction like this ahem: Nick, Clem, Jane, and Luke see a house ahead of a FROZEN river. They all go around and in to the house in the house you guys eat build a fire and relax. After Nick passes out. The group assumes he fell asleep on accident Jane touched Nicks arm and sees a bite. You make the choice to Kill him or wait it out and ask him about it or leave the cabin and let him turn. If you kill him you do the job and leave the cabin a night later. If you wait it out 30 minutes Later Luke taps Nicks arm knowing he's Bit Luke asks him what to do and Nick says: "Let me drift off and kill me peacefully." something actually SAD! You kill him peacefully and leave one night later. You wait it out you go outside walk a mile or 2 and find a nice place to rest. Now Its Clem, Luke, and Jane now Jane and Luke are having more "romantic time" you can say: Quiet down" "Quit it" [listen in their door] or "..." If you pick "quiet down" Luke will say "Sorry Clem"
you say "Quit it" Jane will say "Too late" If you say "..." you will go to bed about 15 seconds later. If you pick [listen in their door] you will hear it loud and clear! you wake up and see Jane and Luke. You can pick: [glare], "your gross Luke" "your gross Jane" or "..." No matter what Luke will make the sad eyes he made when you mention the shed. any who near the Luke and Jane are both getting grabbed and you have to pick between them two. Doug/Carley style!! Time moves slow and there is NO TIMER!!! Yep. Can't love em both! This would yes be sad and would probably educe tears but come one... tbh this would be a better ending than S1's.
