Clementine isn’t a Commander Shepard from Mass Effect or a an MC from DA. She isn’t an utterly blank slate for you to project a character upon. Her actions are to some extent detriment but within her established character framework.
Let me give you an example; in Season 2, it doesn’t matter how much you decline attachment to AJ, your Clementine will still tear across the territory of The New Frontier in an attempt to find him within Season 3.
Because, and this is crucial, Clementine’s detriment actions are restricted by what is believable to her established character. She has been written with boundaries to which even the most hardened, brutal Clementine will adhere.
And, she has been written with options to accept love: the fact that your Clementine can choose to pursue a love interest, either male or female, demonstrates how both Violet and Louis are romantic avenues Clementine would not feel uncomfortable pursuing.
What you control, are the unsaid things, the differing relationships, the aspects which make your playthrough personal.
Perhaps your Clementine falls instantly for Violet and never feels the desire to pursue Louis; perhaps your Clementine sees love as for suckers; perhaps your Clementine loves Louis, thinks briefly of Vi and brushes it off. These are the measures you can control: but the fact that the game offers you a choice, offers Clementine a choice, indicates she is not opposed to a relationship with a member of either gender.
Thus, bisexual.
Even Lee, who is technically more of a blank slate than Clementine (given that she is her own uninfluenced character in Season 1 with GASP motives, hopes, desires and boundaries) will look after Clementine regardless of how much of a dick you play him.
Because protecting Clementine, going to any measure to achieve that goal, is the core of Lee Everett’s established character, no matter the path you choose to get him there.
It is the same for Clementine.

What is the choice being deprived here? Being able to claim Clem as 100% heterosexual? She can still choose between Violet or Louis or neither of them by being bisexual. Win-win for all shippers and non-shippers
I’m not exactly a fan of it either as I think it robs people of a choice in someway, but I fail to see how Clem’s sexuality ruins, or enhances, her character.

Honestly as random as it was, I felt more chemistry with that one flirty line towards Jesus than with Kate's several attempts to get with Javi over the entire season.
